Cooking, Salmon Roe Paté
This recipe for Salmon Roe Pate is of particular
interest to fishermen, who may often wonder what to do
with the roe from a fish. It is very simple to make, tastes
delicious, and keeps well in a deep freeze.
Ingredients:
Lemon juice
1 lb salmon roe
Salt and freshly ground black pepper
1/2 lb softened butter
Method:
Cook the roe gently in a little water in a covered dish in the
oven for 25 mnutes, until the roe has turned pale pink. Cool,
strain off, reserve the liquid and place the roe in the liqudiser
Blend until smooth, adding some liquid if necessary. Then add
the softened butter, salt, pepper
and lemon juice. Mix well, pour into pots and allow to cool. Serve
with hot toast.
