Oatmeal Posset
Flour
of oatmeal, nutmeg, cinnamon, sugar, milk, sack, die. Take a mutchkin
(pint) of milk, boil it with nutmeg and cinnamon, and put in two
spoonfuls of flour of oatmeal, and boil it till the rawness is
off the oatmeal; then take three spoonfuls of sack and three spoonfuls
of ale and two spoonfuls of sugar; set it over the fire till it
is scalding hot, then put them to the milk, give it one stir,
and let it stand on the fire. for a minute or two, and pour it
in your bowl; cover it and let it stand a little, then send it
up.
