Highland Bitters (Very Old)
Gentian
root, coriander seed, bitter-orange peel, camomile flower, cinnamon
stick, whole cloves, whisky. Cut one ounce and three-quarters
of gentian root and half an ounce of orange peel into small pieces.
Put fht-m in a mortar with one ounce of coriander seed, quarter
of an ounce of camo-mile flower, quarter of an ounce of cinnamon
stick, and half an ounce of cloves. Bruise all together. Put in
an earthenware jar, empty two bottles of whisky over it, cover
so that the jar is air-tight, and let it stand for about ten days.
Strain and bottle. More whisky may be added to the flavouring
materials, which remain good for a long time.
