Cooking, Baked Fillet Steak
with Caramelised Onions and Blue Cheese
Recipe
4 x 250g fillet steaks
8 onions, finely sliced
250g soft blue cheese
16 slices smoked streaky bacon
butter
salt & pepper
small bottle red wine
Aberlour, 10 year old
Method
Slice and gently fry the onios until they are soft and golden
brown with fresh thyme. Add the Aberlour whisky to taste. Leave
to cool. Spilt the fillet steaks in half, fill them with the cooled
onions and a slice of soft blue cheese. Sandwich the fillet steak
with 2 slices of streaky bacon. Place the steaks in a pre-heated
rasoting pan and cook in a hot oven to your own preference. Remove
the steaks from the pan and deglaze with some red wine and butter.
Serve with seasonal vegetables and pommes anna.
